I am thinking, hence the question. There must be a good reason to do this and I asked so that I may learn something or be enlightened to things that I haven't given much thought. Thanks anyway.

The way the question was structured made it come off as pretty cocky and a kick in the groin to Duckman's way of thinking (and most of the folks here). These methods of preservation should be second nature to us and be passed down to our kids. It's like being able to shoot, hide yourself, call birds, fight, defend, etc... They are all things that may never be really needed, but being able to perform without thinking when the situation does come up can save your butt. I'm not a prepper, but I do practice old school ways of doing things. I've got too much pride to be a slave to grocery stores and banks, or anything for that matter, and so should you... Watched and helped my parents back in 50-60's canning all types of veggies since we had a big garden. I really didn't think about doing it till about 5 years ago, canned so much gave most away to close friends. It really is enjoyable, first because you know that you "could" depend on yourself for food if necessary. Love smoking meats, make all my sausage.
