If you see some pilons near a deep channel try there too. As mention a shrimp tipped hook under a cork right up on some structure. My dad was the Sheep Head master. When worked at the shrimp factory he would catch 100-200 a week and never casted his line. He would stay on the shrimp dock and drop it over the side.
