I'm no expert but I would leave them alone . Long as the root system basically in tact they should come back fast . If you can move the mulch and stand them back up and shore up with a lil dirt and pull the mulch back that should help . Keep watered well . My exp. planting squash this late is they don't do well . I am in southeast though so we get hotter faster .

PS...You could always throw a few seeds in cups just in case . Seeds is basically cheap so if in a week or so the plants aren't doing so good you have some to replace . Move a lil mulch over and plant in the bed on side of what you have , you can always pull them up .
