Skin those Coots, there is as much meat on the legs as the breast. Remove meat from the bone, boil bones to make your stock for the gumbo and use the Coot meat in your gumbo. Gizzards & Hearts for the dirty rice. Oh, and don't forget the potato salad.

I have never shot a coot, but I am next chance I get. Keep hearing they are not bad, and I don't see how they could be, they are vegetarians and don't fly much.
