![]() As soon as your roux begins to break down with the water/broth, whatever you add, put some eggs in there to boil. This is before you add anything else. Just like doing hard boiled eggs. Boil for 16 minutes. Remove and peel. As you begin to add your other meats, onions and peppers, add the peeled eggs back in the pot and let cook for the duration. They really take on a lot of flavor while in the pot. Just thought I'd share. |

I know people that crack the egg and drop it in uncooked. Pretty good too. You have to be carefull when you stir though or you will have scrambled eggs in there.

I have heard that the eggs in the gumbo came about due to practicality. In the old days, there was hardly any meat. So, people added eggs for protein to substitute instead of the meat whether it was chicken, beef, etc.

Had eggs in my gumbo friday, Sat, and tonight...I could still eat another bowl!! Oh...dont forget the tater salad!!

The first time I saw anyone put eggs in gumbo was the year I met my wife. One of her aunts was cookong and cracked open a few eggs and let them fall into the pot. I ran and told my wife that her aunt was either drunk off her butt or high as a kite. She laughed when i told her about the eggs and said they do that all the time. I was absolutly shocked that they stayed together.

I was at a friend's house when they did the egg cracking deal, once. It was all good till the next guy came by and stirred it! That yoke made one heckuva mess in that gumbo. Tasted fine but the color was all wrong. I'm tellin ya, boil em...crack em...soak em. They come out great! |

Y'all, I couldn't think of anything more disgusting. Why would we put something that came out of a chicken's cha-cha into our food. The only thing an egg should be in IS a live chicken. Think of it y'all. It's a chicken period. Why eat that? If I ever opened a pot of gumbo and found eggs in it, I'd probably die from an aneurism. It's bad enough that the whackos here in Texas put eggs in tuna and potato salad. That's just wrong. I have to carefully inspect each serving to ensure no egg is in there. If you want egg, eat egg salad. And please, keep those sulfur stinking irregularly ablong orbs of nastiness away from me!
Eggs are good for one thing: Baking. That way you can't tell there are any eggs in there. The flour etc. covers them up. |

A lot of people in South LA does it. I am not much of egg eater unless you cook it scrambled. To me, the two things that makes me sick is when someone is eating a boiled egg or raw weiner!!!
