The Dexters are nice, hold an edge very good, but take some getting used to. CaptB on the site can slice one up quick. I haven't used mine enough. I don't keep them that often any more.

You can get a cheap battery operated saw-all at Harbor Freight for about $30 for Reds.
I don't cut thru the ribs on Reds. That will ruin your blades.
With the Reds back towards you, start at the tail and run the blades up till you hit the ribs,
then run around the ribs till you get to the head. Cut from the top of the head down till you
hit ribs again. Then fold over and cut the skin.
You will have a fillet with skin on, or you can then fillet the skin off.

Only bad thing about the Hamilton Beach is the blades are not pointed. You can't punch thru a Reds tough skin.
But they are good knives anyway,

The Mister Twister problem I have is one side of the knife always goes bad. One blade is running and the other isn't.
I don't notice, until I put my fingers on the little plastic thing on the blade and notice one blade isn't moving.
It makes you think the blades are dull and I end up pushing thru the skin, messing up the meat.
