Default Cinco De Mayo Eats

Yesterday was another busy day around the house for me so my wife did the cooking . I was ging to cok some crawfish etouffe but she had a better idea(well considering it was Cinco De Mayo)to make crawfish enchiladas which came out really good.
One of the pans.

Chicken fajitas

Just some of the food. Nachos with homemade white queso cheese sauc with corn, tacos, guacomole sauce my daughter made, fresh salsa my son-in-law madespanish rice and I know I'm forgetting some of the other stuff we had not to mention margaritas and beer.

Everything was delicious as usual!

American cheese cut at the deli, but I just toasted it and ate it for lunch. Sometimes a good sandwhich hits the spot better than a 5 star meal.

I'll have to check with the wife on that sauce. She made all the Mexican food yeserday.

I hate to report this to you but as it turns out she used a canned sauce she bought at the store. She said that since it was something she decided to do sort of at the last minute she just grabbed a can while she was at the grocery.
All I can say is that it was still pretty darn good. If you want the recipe for the enchiladas I'll get it from her tonight. Just let me know.

canned sauce !!! Just joking

I have been on the search of a great enchilada sauce recipe for some time now, tried many but not there yet... I really like Tampico's sauce but haven't nailed it yet...

The search continues !!!!!
