Thumbs up Bacon Wrapped Meatloaf

I was watching Diners, Drive-ins, and Dives the other night and one of those places made a killer looking bacon wrapped meatloaf. Yesterday I decided to give it a shot. I've never in my life made meatloaf so this was more of a test than anything. Made my mix with 1/2 and 1/2 pork and beef and just went all out experimental with the seasonings and such.

Here it is ready for the oven.

She's doing her thing making the house smell amazing and my mouth water. I basted it with a Mcguire's Irish Red and a dash of hot sauce throughout cooking so it wouldn't dry out.

Ready to serve. You can see I added a little colby jack cheese because why the Hell not!

Served with a side of smothered potatoes and geen beans covered in an onion gravy. Can't wait to go reheat some for lunch!!

My grandpaw used to make this.
He would call it a claught?

Probably spelled that wrong. It is a cajun french word.

We serve them on the buffet......we take the trimmings from the steaks at embers and grind the meat fresh with seasonings. We go thru over 30 5# meat loafs minday thru friday for lunch.

What kind of Bacon is that? Looks meaty. I've been using Wrights brand lately, you actually have a pice of bacon after you finsh cooking it and not a crumble like you do with the cheap stuff.

Oscar mayer thick cut. I love bacon A LOT, so the thicker the better.

I hate all y'all!!!!! I do good to heat up pizza or a hotdog!!! Off to town to eat at the great wall bueffet now!!! It's the only thing in town other then mexican food or hamburgers .
