Default Sac au lait Fish Tacos

Cooked up some fish tacos tonight.
Grilled Sacs with mango pico, fire roasted tomatillo salsa, lettuce and cheese.
For dessert we had homemade peach cake made from fresh Georgia peaches.

texjoy fajita seasoning. Man it needed roasted jalapeño to set it off and cut the sweetness a bit. I usually put it in my pico but at $2.79 for a 1/2 pint of mango salsa from market basket you can't go wrong.

If you don't have a cast iron grill pan get one. It cooks the best fish and shrimp.

Fish taco's are so good, I am surprised that you were able to use Sacalait... did you scale and leave the skin on? I would have thought that the meat would fall apart to quick.

Git you some coleslaw, lemon juice and a wedge of avocado over some fresh grilled fish... ummmmmm goood.

Smoking hot grill pan. Season fish and spray with pam with canola oil. Spray pan with oil too. Cook a minute or 2 a side. Turn with tongs remove with spatula. Treat fish like a woman. Firm but gentle.

I do an Asian style too that's great. Use green leaf lettuce instead of a tortilla for the wrap.

Looks good, that's what I ate at Twin Peaks Friday night.

I had some at a roadside stand once somewhere's in Florida. They had fried Mahi Mahi and instead of lettuce they used finely shredded cabbage. They were the best tacos I've eaten.

Hey here is a tip for fish tacos. Try a little broccoli slaw instead of lettuce with it. Damn good.
