Default Leftover Jambalaya and Fresh Eggs

Alright, so for two days I've been feeling like crap and haven't eaten. Having seen a post on a Cajun Facebook page made me even more hungry for an old Cajun dish. So, having some leftover jambalaya and fresh eggs I just went outside and picked up about two hours ago was a no brainer. I went back outside and snipped some fresh green onions and made me a lil something to eat.
Heated up some of that jambalaya with some more chopped green onions.

Cracked a couple of really fresh eggs and cooked those perfectly.

My bowl ready to eat.

Mmmmmmmm............ This is sooo........ goooooood!!!!!

shoooo.....

I eat eggs and rice just about every saturday AM. I've done that with boudin too.

Man that looks great. We do a breakfast stir fry with rice and eggs sometimes. This would be a great way to use some left over jambalaya.
