The Roux (Cooking/BBQ/Recipes) What good is a cajun site without a cooking and recipe forum?

Default Cornbread Dressing

1 pan corn bread
2 eggs, hard boiled
3 stalks celery with greens, chopped
5 green onions, chopped
1/8 tsp sage
1/4 tsp poultry seasoning
salt and pepper
1 can chicken broth

Chop celery and green onions in food processor. Crumble corn bread in large mixing bowl and dice eggs. Combine onions, celery, eggs, and cornbread. Mix in sage and poultry seasoning. Pour chicken broth over cornbread mix. Mixture should be very moist. If more liquid is needed add broth from when you boil down the giblets. Season to taste with salt and pepper.Pour into a glass baking dish sprayed with Pam and bake for 45 minutes at 350 degrees.

Cornbread
1 1/2 cups yellow cornmeal
1/2 cup flour
1/2 tsp salt
3 tsp baking powder
1/4 cup vegetable oil
1 egg
1 cup milk

Mix dry ingredients in large mixing bowl. Add liquid ingredients and mix thoroughly. Pour into greased 8x8x2inch pan. Bake in preheated 400 degree oven for 20-25 minutes.
