I have a friend of mine that will take all the sail cats. He usually don't keep any under 5 lbs. But he tells me you get the red out and the meat is perfectly white and very good.

I eat hardheads. They ain't bad. I don't clean them sumbeotches.
There was a guy who had a camp close to Oyster Bayou and we dropped them off in
his fish basket at his dock. He would clean them and cook them for us at his camp
and we kept the good fish for home.
Gafftop are good eating too. Just not as hard to clean as Hardheads.

I have worked offshore for over 25 years. When I catch a fish, I clean it and if it ain't bloody or oily, I fry that mutha and do a taste test.
I have eaten hundreds of hard heads. But I have never cleaned one.
Gafftop is even better.

Some friends of my dads from Pennsylvania stayed at our camp in hackberry for about a week or so and my dad and I stopped by to see how they were doing. This nice lady says," we have been pulling the crab traps up every couple hours catching catfish out of them." My dad asks have you been eating them?" She says yes they are boney but good-- we started dying laughing and gave them a bag of trout fillets. We pan seared a fresh fillet with lemon & butter, they seemed to like it a little better.

Funny Story Though--
