Big Mike's In Houma, they make their own BBQ sauce that is off the chain. Their original building burnt down, now they setup at a shell station on the east side of houma

Coopers in Junction, TX is awesome as is Laird's in Llano. One other place is in San Saba, TX on the main street in front of the Super S grocery but can't remember its name.

Can't believe nobody's mentioned memphis. Can't remember the name of the place but there is so much good BBQ there I think it would be hard to find a bad one

Thats when we used to get em........Went to SLU also.

If your serious about making a trip to Texas to tour our BBQ restaurants and markets, you have to purchase this book by Robb Walsh:

Robb Walsh has done the homework and road work. The book is an excellent tool to get an idea of how it should really be done.

In my travels, the best BBQ I have tasted has been in Lockhart, TX. My two favorite stops in Lockhart are Smitty's Market and Black's BBQ. The sausage at Smitty's is insanely good. The beef at Black's is the best I have ever had from a food establishment. My son ordered a beef rib plate at Black's and the lady behind the counter told him that they only had one beef rib left. It was the size of a football and cost me $16.00 by itself. My wife is not a fan of smoked sausage. She took one bite of the sausage at Smitty's and finished a whole link by herself.

My .02 opinion, if the pit smoking the meat is automated, the meat will be boring and bland. Human interaction is a must to make quality BBQ. The closer you get to the taste of backyard BBQ, the better.

DO NOT SOAK YOUR MEAT IN SAUCE!!!!! If your meat is cooked right, sauce won't be necessary.

Thanks buoy37. Just ordered the book. Lockhart was the one town I already knew would be one of my stops. After I read the book I'm going to pan my route. Plan to do Texas. Then Memphis and the Carolinas next year or later this year.

To any of you that fish Toledo on the Texas side...maybe you can chime in on my favorite for ribs....hell...it's all good: Hemphill BBQ. This guy has the old school wood smoker on a rotisserie in an huge iron pit that is hand cranked. This guy knows his how to cook to the T on that thing and his rubs are the TITS. Don't even need BBQ sauce.
