They are great on the grill. I do some along side my redfish on the half shell with the same seasoning. Leave the skin on. This web page shows grouper, but its the same for reds. http://www.saltwaternow.com/throat.html
I usually split them in the middle before removing them from the fish. And I don't use foil on the grill. If you try them once, you will never throw them away again! |

Looks like no one keeps their redfish throats. Call me next time you're at the cleaning table and I'll come get those nasty things !!
