If you are worried about a deer running then shoot them straight through the shoulder - plain and simple. They can't run and the won't run. All the big deer I have ever shot, have been shot through the shoulder and have dropped straight in their tracks. If you want "knockdown" then that's my advice. Not saying anything about wasting meat though...
