Default Broccoli and Cheese Soup

Yesterday afternoon I decided to make some broccoli and cheese soup for dinner last night.

Started with a glass of wine and chopping an onion.



Done! Just had to make some garlic, butter and olive oil croutons.



I added more broccoli than it called for. We like our soup with some substance to it.

Here you go. I omit the nutmeg and I also put more broccoli.

Broccoli Cheese Soup


Ingredients
4 tablespoons melted butter
1 medium to lg. chopped onion
4 tbsp. flour
2 cups half-and-half cream
3 cups chicken stock
2 lb fresh broccoli (about 1 cup)
1 cup carrot, julienned
? teaspoon nutmeg
2 cups grated sharp cheddar cheese
salt and pepper to taste
Instructions

Saute the onion in butter until clear. Add flour and cook medium heat for about 3-4 minutes while stirring.
Slowly whisk in the half and half and chicken stock. Let it simmer for about 20 minutes.
Add the broccoli, carrots. Let them simmer on medium low for about 25 minutes until the broccoli and carrots are tender.
Add salt and pepper and sharp cheddar cheese. Let the cheese melt and then serve. For a smoother soup puree it in a blender... but I love the chunks!

2lb of broccoli is a lot more than 1 cup.

Soups looks great, I love a good broccoli and cheese soup.
