Garfish meat if firm, not mushy, and white.
I cleaned a choupique before, the meat was too yellowish for me.
I didn't even try to eat it. Just didn't look good.

forgot to say that a lot of ppl eat them around the house!! Just have to keep them alive and healthy which is very easy as long as theres water on them. Never ate them myself but hear they are better than garfish

We used to crush 'em on the ol mister twister purple w/ firetail....Caught one in Tickfaw river just a tad over 13 lbs. They love the back end of sloughs & run outs with clear "black" water. I usually take my seat post off & beat the pizz out 'em!

half shell em, put em in the freezer, after its froze, scrape the meat off with a spoon and put it in a bowl, then make some patties out of it.

I've ate em once. It was ok but not fantastic. The friend that cooked it up for me said you gotta catch it, clean it and cook it. The meat gets mushy if you don't. I guess if your gonna pattie it up, I'd try it like cat daddy said. I catch a lot of em when I'm yo-yo ing. I give em to my friend and his wife.
