Default Salty Cajun Sign on I-10

We will have a sign up on I-10 near Welsh for the next 6 months. Which one of the three do you guys like better?

#1 will be easier to read while passing in a moving car at 70 mph.

ETA - I really think you should use logo in # 1 and header in # 3.
