there is a restaurant in panama city that has serves fried grouper throats and its their top item..

They are great on the grill. I do some along side my redfish on the half shell with the same seasoning. Leave the skin on. This web page shows grouper, but its the same for reds. http://www.saltwaternow.com/throat.html
I usually split them in the middle before removing them from the fish. And I don't use foil on the grill. If you try them once, you will never throw them away again!

Looks like no one keeps their redfish throats. Call me next time you're at the cleaning table and I'll come get those nasty things !!
