Default Gumbo and etoufee

If anyone needs a recipe for chicken, sausage an shrimp gumbo that will feed 50 -60 or a crawfish etoufee recipe to feed the same number ,let me know. i just finished chopping all the meat an veggies to do both next weekend in Fla.
Now i gotta go sharpen a few knives.

I'm making the gumbo in a 120qt pot and the etoufee in a 40 qt pot .

I belong to a web site on meat smoking, curing and making sausage and bacon.
Some of the other folks on here are members. www.smokingmeatforums.com
We have a gathering every spring in quincy fla. and in franklinton la in october.
Last year we brought a couple a sacks of crawfish and did a boil but we only had 35 folks. This year we figure on 50 to 75 folks for the weekend so mudbugs would be cost prohibitive. I will cook a gumbo w/ potato salad and crawfish etoufee and rice for fri night supper. Friday night is happy hour .Breakfast sat . Getting a couple a sacks of oysters to eat on during the day.then we will have 3 big trailer smokers fired up w just about anything you can imagine smoking.
Big meal sat night. Breakfast Sun then clean up and break camp
Any of the folks here that are interested are welcome to attend the Louisiana gathering in October. We will be setting the dates while in Fla.
As soon as i am sure i will post up the dates on S.C.
