Been on both sides and played in more tournaments than I care to share. You want something to make a splash and that they remember you. Everyone does sausage or some type of bbq or jambalaya. You may get some type of fried food at others. A lot will depend on your budget, help you will have and how much hassle you are willing to put up with. For the golfer, make it easy fast finger food that doesn't make a complete mess or ruin a shirt.

I know at the Lafayette Oilmans' the biggest hit is the fried catfish with pepper jelly by PSC. Its quick and finger food. I have received rave reviews of fried ribs and brisket sandwich of a pistolette. Either are good, brisket is cooked the night before and shredded with home made bbq sauce.

Also had Monday braised pork cheek with some type of sauce, bacon butter and micro greens of cilantro by Ruffino's. It was pretty dam good!

Go to smoked meats forum and search Atomic Buffalo Turds, ABT's
Good finger food to eat at the run at something like that.
You can stuff hot and sweet peppers with things like sausage, cream cheese and chipolata. Wrap them in bacon, Prosciutto, or ham.
I have cooked these for several events. Most of the prep work is done the day before and you cook them that day.

Boudin eggrolls with steens syrup and pepper jelly dip. You can buy the rolls already made from Billys in Scott.

Grilled Pig Wings is something else that's different. The size of a big chicken drumstick. Use a good sauce and they'll definitely remember that. You have to get them from a food distributor like Reinhart in Metairie. Let me know if you're interested in those and I can hook you up with someone that works there.
