Default Cured meats

Recently finished up on a breseola, lomo, and panchetta. Thought I'd share. Paired up real nice with some cheese and olives.

Been doing it for only a few months. So far have done bacon, corned beef and these. For these that needed to be dried I used Umai bags. Unless you have a fridge with temp and humidity controls the umai bags are probably the easiest way.
