Deer and ribeye sausage stew
Got the sausage and deer meat browning.... deer stew 1.jpg deer stew 2.jpg Sweated the vegetables and added the meat back to the pot. Filled the pot with some coffee and beef stock then in the oven for a few hours. deer stew 3.jpg After about 2 hours I pulled it out of the oven and took out about a cup of the gravy and mixed it with some flour and added it back to the pot to thicken the gravy up. I let that slow roll for about 30 minutes. I had some potatoes but decided I wanted them to have a little crunch instead of stewed with the rest of the vegetables. I coated them with olive oil and tossed them in a seasoned flour mix and popped them in the oven while the gravy thickened on the stew. They had a crunch outside and a soft inside. Might I ask how much coffee you used along with the beef stock ??? Never heard of that before...

I used about a 1:1 mix. Maybe a little more coffee mainly because I was running low on beef stock. It sounds weird, but you really don't taste the coffee at all once it's cooked. It definitely adds a richness to it, but if you didn't know you would never guess it was coffee.

With out writing a book here lets just say we usta do alot of camping when I was a kid. Grand father father 5 uncles and a few cousins would go in the swamp north of henderson ans camp at one of our favorite spots boat access only and only then if ya knew where you were going. Many many a afternoon meal had this mornings left over coffee in it. with a roux, or tomatoes, or just onions it was always good and many a fond memory of eating around a fire with that bunch. Either it was mighty good eating or the old addage is true anything taste better when cooked on da bayou.
