Hairout best deer jerky technique

I've never made deer jerky before. So whats ya'll best cookin recipe and technique. need help with details. Thanks! 'HAIRY'

I recommend going to smokingmeatforums.com , and there under forums is a section on jerky. personally i cure my jerky so that i can cold smoke it and dehydrate after smoking. But there are many recipes and techniques.

My best advice is to make sure u take off all blue skin and have only prime meat. I like to use the quadrants in the hind legs. Take ur time and slice it evenly.

Jerky is a very vague term and runs the gambit from heavily marinated in some weird terrioke, chutney hawain jamacan stuff till ya cant taste the meat no more to plain smoked or dried. First thing ya ask ya self is what kind of jerky do you like. Once ya know what ya like the smoking forum mentioned above is the best place on the web for all things smoked IMO

I use some pepper jerky seasoning from Walmart. Then after leaving it in icebox overnight. I smoke mine at about 180 degrees with hickory chips. It get ate really quick.
