FlagUS Wild Turkey (Not the Whiskey..)

I usually end up with wild turkey meat this time of year and I am always looking for new ways to cook it. My favorite is chicken fried with milk gravy. I have grilled it, BBQ'd it, and cooked it on kabobs etc. The breast meat can be tough and dry. Does anyone have a favorite way to enjoy the turkey breast meat after their harvest?

Just looking for a few ideas...

Favorite is fried. But I've also made wraps and those are good to on the grill. I keep the thighs, wings, gizzards and hearts for fricasse.
