I prefer pintos to red kidney beans they cook up creamier. White beans are a very good meal and go great with fried fish or chicken. white beans are served with fried fish in the bayou Lafourche area. They do go good together. My personal all time favorite si black eye peas. I love the earthy chalky flavor and they are great cooked together with chicken and if yall aint ya need to try black eye pea jambalaya.

I usually do a mix of one lb pinto and one lb red kidney. It works good.
