Butterfly redfish fillet stuff with crabmeat cream cheese filling .....Will be having this again....

I do something simular with red fish or any fish. I make my stuffing with mayo stead of cream cheese may have to try that also crawfish and butter make a good stuffing base too

I use 8 oz. cream cheese , pound of crab meat , shallot , salt to taste and 1 1/2 tablespoon zat. liquid crab boil......I put an egg with enough mayo to hold together crabcakes with imitation ritz , dollar general , crackers with same seasoning . Never thought about using it as a stuffing . But I will try....
