where to get big pots?
where is a good place to get a big dutch oven or cast iron/enamel big pot, like maybe 20 qt. or bigger? seems like when i start a gumbo or similar dish, i always end up out growing the 12 qt. pot. i've got a ss larger pot, but the bottom is sorta rounded and not good for roux's or evenly distributing low heat and it wobbles. surfed the net and got about a million pots that i never heard of and some of the pricing was way over my budget. |

Yeah, me either. May never! Found some 20 qt cast iron, but they're Chinese and don't really want to go there.

I use a 20 qt. stainless with the thick bottom at least monthly and I have no problem at all with it. "thick bottom"....You can get them from restaurant supply companies .

They like at least 3/8" but I think its some sort of composite material its made from. You can get smaller ones from wal mart. I've got up to 12 qt. at home and where I cook at we have one must be 8 gallon.

I think they may be copper encased in stainless. All the ones I have at home I got from wal mart. The bigger ones I use where I cook come from a restaurant supply.

The lid is simple. Just make about 1 inch bigger in OD than the pot. It will lay perfectly flat. I have several home built pots and the flat lids work perfect.

Magnalite's make the best gumbo
Here's a 18" 20 quart. I saw a used 20" on ebay. Both of my grandmothers used these for gumbo pots. I inherited one and use it for Gumbo and pot roasting. I got a 20" and can pot roast 3 or 4 specklebellys. I think I cooked 40 doves once in it. Best pot I have and its probably 40 or 50 years old and been used alot. My grandmother used to cook for 5 to 10 farm workers every day.
