Default 5 Pepper, Garlic and Lime Wings

I made these wings the other night, and talk about GOOD!! My wife loved them, and she is not very big on spicey foods. She said they had just the right kick.

Marinade:

4 Tablespoons Lime Juice
5 Tablespoons Olive Oil
2 Tablespoons Honey
2 Teaspoons Lime Zest
2 1/2 Teaspoons Salt
McCormick's 5 Pepper Blend

Breading:

1 cup Flour
1/3 cup Bread Crumbs
Salt
5 Pepper Blend

3 pounds of wings

Mix marinade. I put about 2 tablespoons of the pepper blend. Pour over wings, refrigerate 2 hours. Mix coating, coat wings. Then, just go ahead and slap them on the grill for, oh heck, I don't remember how long I cooked them for. You basically get a grilled fried chicken wing, without the grease.

money is tight right now so I'll give this a try with bacon drippins stead of olive oil and thighs stead of wings. They way cheaper and meatier anyways.
When I was a kid olive oil was for ear aches:*****:

Lmao, yeah, anything would work. Wings were on sale, so that's what I used. These were actually some super wings or something, had a lot of meat on them.

Keep in mind this was 15-20 wings. This recipe might only make a few thighs. Bacon drippings might change the flavor too. I might try vegetable or canola oil. Not sure how much effect Bacon drippings would have on the flavor.

Idk how much of a difference it will make, but I cook on a little brinkmann smoke n grill. Never been a fan of gas grills, and I like the Smokey flavor from grilling with charcoal. I smoke a lot with applewood, didn't use it here though. Too many conflicting flavors.

this looks awesome, I want to try it but I don't see how much McCormick's 5 Pepper Blend to add to the breading?

is it like the marinade? 2 tablespoons?

Add how much you want. I like a little more kick, so I add a good bit.

Also, forgot to add the garlic to this. I put 6 cloves, but you go up to 8 or down to 4.

ok but when do you add the garlic? to the marinade (I assume) or maybe with the breading?

also im planning to try it baked in the oven like a shake and bake, you see any reason I would have a problem doing it that way instead of the grill?

Garlic goes in the marinade. And no, I've done wings like this in the oven before. Shouldn't be a problem. I just like the flavor they get from the grill, but I'm sure they would be great in the oven. Probably really get that heat and citrus flavor then.

thanks, what do you suggest (guesstimate) for time and temp doing it in the oven?

would be ok to add some onion powder to the marinade to give it a little onion flavor too? (unless you think it would change the flavor profile)

I'd say go 400 degrees, 45 minutes.

I personally wouldn't go for the onion powder, because to me it would be too many flavors going on, but its all personal choice.

well, I made it last night and here are my impressions:

yes I think the onion powder was not a good idea because it did taste like too many flavors going on.

there was no heat to it at all so I wouldn't even call it mild wings I would consider this a version for those who don't want pepper and for the average guy that's wants "some" heat to add pepper to it like it doesn't already have any pepper.

for me, I tasted mostly the lime as the strongest flavor and the onion just didn't seam to belong with the other flavor combinations so I think next time i'll cut the lime juice in half and skip the lime zest completely and then add some cayenne to it. now that I think about it I had used the lime juice in the bottle so maybe it was a concentrated version?

I was scared it might come out too peppery hot using something called "fiery 5 peppers" but there is no pepper heat at all in that stuff, it must be yanky idea of pepper lol.

on cooking time, I did 20 minutes @ 400 then flipped them and did another 20 minutes and they came out cooked just right but it wasn't crispy.

I had them laying flat on the tray and when I went to flip them I had to baste them with veggie oil because some of the breading was still powdery dry. maybe it wasn't crispy because I basted it with a light coating of oil to wet the other side?.

everyone still loved them and they were a hit at the booray game (finger lickin good ), but they still didn't let me win any money

I think I might try frying them next time and see how that comes out since im not worrying much about eating healthy
