250 with a wood fire for 6 hours makes everything good. Ok maybe not bear meat. Hell 10 hours didn't help that stuff.
Never had goose wings but I bet they are great. Good luck and post pics |

Not a lot of people keep the wings. They just cut the legs off. The wings have just as much meat as the legs. May take about 10seconds longer to do the wings but they are worth it. Just as tender and tasty as the legs are. Best piece of meat on the birds as far as I'm concerned. Made a Sauce Picante with some one time...

I would use those in a gravy or gumbo. There is nothing like a good goose gravy!

Yes goose gravy is amazing. I still have plenty of geese though. That's probly the next project for some of the birds. Got to get this freezer more on the empty side. |

Legs and wings in brown gravy. Breasts marinated and bacon wrapped. Both are hard to beat.
