Default ponchatrain sauce

Does anyone have a tried and true recipe they would not mind sharing? I figured I would ask these Cajuns. Isn't a ponchatrain supposed to have shrimp or some kind of seafood in it? I was planning to blacken some red snapper and put the sauce over the top.

I know I'm not a real Cajun, but I NEVER heard of a Pontchartrain sauce until I moved to Texas. All I know is that it has TONS of butter in it.
