Default Sunday night... Steak time

I got tired of seeing y'all's food posts so I decided to cook my self a steak and make my own...

First you have to start with a good quality steak... I just happen to have a couple laying around.

Then you sear it in a cast iron skillet in pastured pork lard from a pig we bought from another local farmer. Cook a sweet potato and some green beans and you got a nice little meal goin

Ho-Ly Crap..... I'm all about a good steak. I just can't see paying all that money at a restaurant for a steak I can cook better at home. How do you prefer yours? I think past medium rare is a waste of a good steak.

Yeah I eat it med rare. I also poured the garlic, herb, butter mixture that I cooked the green beans in over the steak

You would let me know, I would put your name down on a list, you would send me a deposit, I will let you know a couple weeks before we take em to Elliot's. We generally hang em for 2 weeks, then they get cut. You can either come pick up the meat at the house or at Elliot's in Morse

Never cooked a steak in a cast iron skillet only over a flame. How long do u cook it? If u don't have lard what would u put in skillet?

Any oil with high smoke point will work i do 90 seconds on side one, 60 seconds on side two, then top with butter garlic sauce and finish in the oven for a couple minutes at 425 depending on the thickness of steak. I eat mine rare and the cast iron is my favorite way to cook a steak.

I prefer a searing plate on a gas burner outside.
I get the plate real hot and sear it on each side for about 15 seconds then back off the heat. It seals all the juices in.

I like mine med rare I do 3 minutes on one side and 2 minutes on the other on my steaks. They are 1 1/4" thick. Olive oil is my second choice. I season with only salt and pepper when I put them into the pan

Look up Alton Browns method on Youtube, that's how I cook my steaks. Very similar to what Meaux does.

Thats the way to do it, sear on grill, finish on grill plate with some butter sauce to degree of rare. Starting doing this when I saw several restaraunts do it that serve excellant steaks.

That's a nice finishing job for grass. We could only do that well on pasture by turning them loose in the purple top turnips.

That's actually not even a finished steak. That's just the grassfed beef we sell at the farmers market.
