Default Spanish Mackerel

While in Florida over the weekend, I struck up a conversation with a couple kayak fishing at the beach. The second day there, they were nice enough to give me one of the Spanish mackerel they caught. The only mackerel I've ever eaten before was sashimi style and I found it extremely fishy, but they were nice enough to offer so I gladly accepted. I tried it 2 different ways and I have to say both were pretty good, but the second way was way better. The wife concurs as well.

1) Seasoned with salt and pepper and pan seared with a rosemary butter sauce and a tomato and cucumber salad with a lemon and rice wine vinaigrette.

2) I liked the lemon and rice wine vinaigrette on the salad so much that I decided to try it on the fish. I did an hour marinade in straight lemon juice and a half of a fresh cayenne pepper diced from the garden. Seasoned with salt, pepper, cumin, and chili powder. Pan seared and used the lemon rice wine vinaigrette to make a butter sauce. Served it with a corn salad on the side.
