Yellow rice, nothing special, can get it at regular store in Mexican area. Saut?ed a little onion and red pepper and added cilantro at the end.

a woman from somewhere in South America showed me how to sliver carrots and cook with the rice for a orange rice that's delicious. just cook the rice regular with the carrots in it. trial and error to how much to put in.

Yes Raw carrots, I worked with several Hispanics over the years and they use raw carrots and a little bit tomato sauce, just for the color maybe like 2 TBS for 2 cups of rice, and a tiny bit of saffron (its expensive) Rice goes in raw.
