This may be the easy way out but is a very good and easy chilli. I just use the 2alarm box mix (should be near diced tomatoes in store). It has everything you need minus meat and tomato sauce. I like to add rotel and beans. Very simple but good

1/2 cup celery, chopped
1/8 cup jalapeno peppers, chopped
1 cup onions, chopped
2 Tbsp minced garlic
1/2 lbs of butter
3 cups of water
1/2 cup of chili powder
1 Tbsp paprika
1 tsp cumin
1 tsp oregano
Procedure:Sauté the peppers, celeryand onions in the butter until the onions become clear. Add the ground deer meat and sausage. Brown the meat on low heat, stirring often. Once the meat has browned add the beer. Cover and simmer on low heat until the liquid is gone, stirring occasionally.

2 alarm. all of the ingredients are individually packaged so you can put less or none of any particular seasoning.
