Default pork fat?

well i just got done trimming a pork shoulder, and i have about two pounds of pork fat left over and id rather not throw it away.most people use it for frying but id rather try something else to do with it, any ideas?

Cook it down and use the grease for a Roux, or grind it up with your deer meat.

freeze it till you get ready to make beans. fry it down just like you would bacon. and use the fat to cook your onions etc in..
