You want a rich sauce or a tomatoe sauce.?
You can Melt a stick of butter ,Add 2 Tbsp of olive oil. Throw in a handful of finely diced onions, sweat them down. Add a cup of chopped pecans. cook till pecans start to brown. add 1 cup pet milk or 1/2 &1/2 stirring to mix. once this is hot you can add 1 cup crab meat if you like . If you add crab cook for 5 min and pour over fish. Top w/ diced green onions and serve. For a more non traditional sauce, heat 1/8 cup olive oil add 1/2 cup thousand island salad dressing heat and mix well . Add 1/2 bottle of tiger sauce.stir well. spoon over fish top w/ toasted cashews and green onions. If you want the sauce spicy you can add finely diced jalapenos to either . The 1st add it b4 the onions . The second add them before the thousand island dressing. |

Easy one:
Melt 1 stick of butter in a small pot Add what ever kinda seasonings you like. I use Crystal hot sauce, Black Pepper and Cayanne. Slowly stir in 1/2 pint of heavy whipping cream. Stir to keep mixed. When it just starts to bubble, it is finished. Pour over fish. |

One of my favorites is to use shrimp Etouffee as a sauce to put on top of fish. It is very similar to what several others have posted.
We make up a big batch of shrimp etouffee and keep it in the freezer. I does not last long in the freezer because the wife is always wantin to take some out when I fix some fish. |

X2---put some pico Deguyo in a skillet with a little butter and saute.spread a mess of it over your fish and bake. kind of a fish Vera Cruz. i like it on trout mostly. it's different.
