Oven Baked Goose: Put garlic in breast, I assume birds are plucked, Brown bird well on stove or in oven at 500 deg., put in black iron pot breast down, cut up 2 onions and 2 bell peppers, pour on top of birds and some in cavity, put fresh mushrooms on top of onion and bells, pour about 3/4's of a bottle of cooking wine, I like sherry, put cover on a bake for 4 hours at 275 degrees, serve with rice, yum, yum, I do prefer specklebellys. enjoy.

We used to bring them to Wago wheel before they tore it down to build best but. That was the best smoked goose ever. But they dont exist anymore. I think the guy at Smokey Joe's will smoke it for you. Just stuff some pieces of garlic in the breast before you do it. |

If breasted, cut breast into 1/2 inch strips, cut breast crossways, marinate in milk, lea & perrin, and tony's seasoning overnight, fry as you would backstrap, egg and flower batter, cook until floating and not much bubbleing in oil, yum, yum!!!!
