Default Homemade Salsa

I tried my hand at making some salsa this afternoon. After trying the end result I was very pleased and proud of myself. Only bad part was I burnt my mouth my not letting it cool off first and couldn't really enjoy it. ImageUploadedByTapatalk1378005086.922256.jpg

No it has a greenish color from the cilantro. The picture didn't come out that great. I'll try to post another picture.

Bay Bolt i see you have crushed tomatoes in your recipe. I was told by a pro chef that you should never use that. Reason being is that is where all the bad looking tomaotes go. The tomatos roll down a line, inspectors reject the bad ones, from there they go down another line and workers cut off the bad parts and send them down the crushed tomato line. He said to always buy whole tomatos and crush them yourself.

Here is my recipe and I guarantee you will love this stuff, everyone I gave some to said it was best they ever ate anywhere, I trippled this recipe:
8 cups fresh tomatoes, peeled/diced/drained
3 cups onion chopped
2 cups bell pepper diced small
1 1/2 cup cayenne diced fine ( 1 cup if you don't want hot )
6-7 garlic cloves minced
2 teaspoon black pepper
1/8 cup canning salt
1/3 cup sugar
1/3 cup vinegar
1 15oz tomato sauce
1 12 oz can tomato paste
Mix all ingredients & bring to boil and cook till onion/bell peppers done.

Unless you want it chunky, I took a hand held blender with cutting blades and pureed salsa to my liking ( less chunky )

Can in jars to your size liking.

I make mine very similiar, but I put in some Jalapeno pepper and lots of finely chopped celery. I like mine crunch, so I don't cook it. I also put in a lot more sugar.

I put in the fridge over night......and stir it up a few times before eating.

I usually use fresh tomatoes, cut up into small pices or sometimes I take out some frozen [chopped up] stewed tomatoes to use.
