Default Pot Fried Rabbit

I pot fried a cottontail last night, cooked it for 2 1/2 hours and it never got tender. Got tired of waiting on it to cook so I just ate it.

I dusted it with flour, browned it in a little olive oil. Took it out, browned my trinity and added the rabbits back. Covered it with a little water, covered the pot and let it go, I kept checking it and never got fall off the bone tender. First time that's ever happened to me. Normally 1 1/2 hours and the meat is coming off the bone.

Put it in a pressure cooker for 30 minutes before you fry it. It will fall off the bones

This looked like a young little rabbit. Little cotton tail about 4 pounds maybe. Tasted good It just didn't get tender. I guess I'll to invest in a good pressure cooker.
