Boil the meat about 30 min or so depending on the size of the coon ! I use crab boil for seasoning, once that's done I dedone the meat and brown it up to make a great rice and gravy !

Both sounds good, but I won't have time to smoke it. Now hopefully I can make the ol' lady think it's rabbit!! I'll let y'all know how it turns out.

Bake it in the oven. Put in roaster with carrots, celery, onions, and sweet taters. Remember to remove all the musk glands.

I hear that if you don't get all of those glands out it will be ruined. How do you know if you have removed all of them?

Next time you get some take the time to lightly smoke them and put in gumbo. Best gumbo you can eat.

Just got done eating a plate of coon in a gravey. It was awesome!!! As soon as I figure it out I'll post a pic of it. Thank for the recipie fishmaster... As soon as I get some more it'll be smoked gumbo time!!!

We used to boil down then de-bone and make a coon spaghetti.....
