Default gator tail

i'm from over in alabama and was given a frozen gator tail from a buddy i work with.he took the gator last season and was running out of room in the freezer. i was wondering how do i remove the 2 tenderloins? i was told they were located inside the tail on the underside. how should i go about removing the meat that covers them so i can get the tenderloins out neatly?

Just like cutting the tenderloin out of deer! Your will see the "rolls" as you cut down the side of the bone it runs along the bone on top and botom on both sides of the tail, if I can remember correctly...you can eat the muscle that surrounds the tenderloin too...but beware if it looks like fat cut it off. You do not want to bite into gator fat...the tenderlion should all be good though...thats the gold...pretty and white!

ok well how do you go about removing that top muscle that surrounds the tenderloins.. do you just cut down the center of the tail long ways and just filet if off the tenderloin?

yep follow it down the tail and filet the meat off the tenderlion its like a meat jacket...lol You'll see it.
