Last night grilled 3 lobster tails n seared a filet to make beef tataki with marinated onions

Take a filet let it set to room temp, season with salt n pepper. Heat up an iron skillet and very very briefly sear the outside of steak , then put it into a plastic ziplock bag and submerge it into a ice water bath to stop the cooking process. Slice it thin (less than an 1/8" thick) and marinate it in the fridge in Ponzou sauce ( citrus soy sauce) serve with sweet onion sliced paper thin that are marinated in Ponzou . Basically very very very rare steak

yes sir this is true we chowed on that last year in GI !! ceviche is off the chain !!
