Jambalya fo sho. If you want to catch some good catfish for some frying, bring ya some 20 oz coke bottles (about 40-60)and some string and hooks. I like 6/0 up to 8/0 myself. Catch you some little bream on some small perch hooks and just before dark go out and bait em and chunk em out in da water. Great for the adults and kids. It gets real excitin when you see one of dem bottles go under and run about 20 feet or so before it comes back to the top. then the chase is on to get it. If you all are stayin for a week, you will have a blast doing this and get fish to fry. Don't know where you are staying, but you can go to the mouth of about any cove and do it...throw out jugs. Have fun and catch some fish. Once you start catching the cats, keep the bellies for cut bait, It works great out there.

lol, this is some great ideas guys. i love the new things with the crawfish boil, and the old ideas that i had forgotten about like the red beans and rice. Quackhead, i love how you made it sound chasing the bottles,, i'm almost getting anxious lol

Season up some bass or white perch fillets, fold some foil up in a pan shape, throw the fillets in with a little water and cover with another sheet of foil and chunk it on the pit.

Why not pastalaya?
So much easier than jambalaya.





Ingredients:

2# Pasta (your choice)
2# Cubed pork,(Small cubes)
2# Smoked sausage
3 Med . Onions
4 ribs celery
1 Bell Pepper
1/2 Cup shallot greens
1/4 Cup chopped parsley
3 Tablespoons Worcestershire Sauce
1 can Golden Mushroom Soup
1 can French onion soup
2 cans Chicken Broth
1/2 Gal Water.
Kitchen Bouquet
Salt
Pepper (red and black) Directions:

Brown cubed pork until tender, add sausage and cook for about 20 minutes.
Add chopped onions, celery and bell pepper. Cook until all vegetables are wilted.
Add chicken broth, water, soups and season well.
Add a little kitchen bouquet for color. (you decide.)
Bring to a boil and add chopped shallots and parsley. Boil for about 10 to 15 minutes. Lower heat .
Add pasta and cook for 20-25 minutes, until pasta
is very tender. If you have to much liquid you can remove some. if not enough ,you can add some.
This is a starter recipe!
You can also add cubed chicken or beef and a lil andoullie.
Better to use elbow macaroni or shells over spaghetti as the spaghetti dries out pretty quick.

You could also do almost Jambalaya Po Boys, instead of using rice or noodles just slap some dat jambalaya on a french bread and eat it up.

My go to when I have a lot of family over is either boiled seafood or a Boston butt pork roast with white beans.

check out nomenu.com he has some good recipes, the pepper crusted pork loin is the bomb with that sweet heat sauce.

Also, you can get a couple of big ole ripe mississippi watermelons and ice them down and eat em up

If ya going to do water melons make sure an do one for the adults!
Plug it stick a fifth of stoleys in the plug hole and ice it down .

Great burger
Here is a great burger for ya'll to try !!!
mix grd beef and seasoning to make your favorite burger,
portion meat to make lg patties, seperate portions into halves.
Now comes the good stuff. Slice some andoullie thin , get some slices of your favorite cheese. take the 1st portion of your pattie ,flatten , cover this w thin slices of andoullie and 2 slices of the cheese ( i use either pepper jack or sharp chedder) take the other portion of your pattie flatten and place on top. seal the edges of pattie by pinching the ground beef together and grill to 160 deg internal temp. for med/ well
Sautee mushrooms and onions and fry you some bacon crispy top burger w/ these and enjoy.

take you chicken tender's, cut them into little bite size peices, stick on a toothpick, stick a jalopenio on, wrap in a small peice of bacon and grill.
**marinate the chicken in Carribean Jerk Chicken Marinade.

this reminded me of how my mom growing up would make lasagna, enchiladas and other dishes on sundays for the week, she would bake then freeze and defrost during the week and reheat still just as good, like you said gerald keep it easy and spend more time fishing and having fun

If you are planning to serve some Jambalaya........make the "stock" [everythng but the rice and only a minimum amount of water] at home. Freeze this in small containers.

Then all you have to do is take out what you need.......add some water and heat to unthaw before adding the rice to cook.

When making a big batch of Jambalaya.....I will boil the chicken [only using a little water] in a seperate pot and then remove the bones. This way you do not have the extra "mess" of the bones when eating.

HEB has already marinated fajitas and they're good . . .East Texas has all kinds of garden markets on the side of the road right now . . .Home grown tomatoes, peas, beans, okra, peppers, onions, etc. Fresh and good! I went to Tyler last Tuesday and picked up 6 bu. of Noonday onions . . . I love this part of the year . . not to mention blueberries, plums, peaches, etc. . . . Enjoy!
