Its a Dexter Russel, but he has his made with shorter blades than the shelf knifes, and belive me its not just the knife. I have 6 Dexters, and can clean with the best, but this guy is one of a kind. He runs through 15in specs in 3-5 secs.

Most Academy sports carry them for around $ 15 to 25 depending on style

If any its the six in. but from what he says he has his made with a slightly shorter blade than the six to make it more stiff w/o flex! Dont know him personally, but a good friend of mine does, and says this guy is unbeliveable at what he does. Sick fast and consistant.

I haven't touched an electric knife in a year. The key is a SHARP Dexter Russell. My dad just gifted me a 7" boning knife and the thing is a beast the blade is stiff perfect for Reds I am going to get a 7 or 9 inch filet for Trout and Flounder. I use the 9" scalloped model for offshore fish. Best knives on the market!

Yep, looks like a Dexter Russel to me. They got them at Academy. The guides down in Venice use them too and they are almost that fast. They can unzip big snapper and huge AJ's just like that. It's like anything, in the hands of a master. I would be missing fingers if I tried to go that fast. I went down to fisherman's wharf in San Francisco and the little Vietnamese ladies were cleaning big halibut like that. Zip Zap done! They kept a sharpening rod handy and hit it a lick after every few fish. The guy in the video is really good.
