Default Big Easy Fryer Smoker Temps?

I know the bird should be cooked to about 165 internal. My question is: how hot should I keep the internal cooking chamber? The gas burn rate is adjustable. I know that I had to do ribs at a low internal temp. Is a turkey best cooked at full temp or turned down some?

I usually smoke at 235 - 250 my big easy is not adjustable so i just go till thigh joint is 160 then rest for minimum of 30 min. before carving

I used it on highest heating setting today until temp become 165. Let it rest for 25 minutes and here are your results...ImageUploadedByTapatalk1417126308.450659.jpg. Was delicious!
