Default Eggpalnt ideas

I grew a bunch of eggplant last fall and I peeled, boiled and cooked em down and froze them. Now I need some recipes for it.

I used a lot of em fresh for parmagiane and fried some. The plant withstood the "winter" and it's starting to bloom again with more.

i like them grilled cut 1/2 or 3/4 thick slices season with olive oil salt pepper and throw them on pit for 10-15 min

Eggplant dressing. Saute onions/bell peppers/ celery in butter, brown a couple of #s ground chuck then add cubed eggplant stirring on med heat for 5 minutes. Add 1/2cup of chicken stock. Cover and simmer for 1/2hr. Add cooked rice, parsley and onion tops stir and serve...great with b-b-q.

Make a dressing with the egg plant, shrimp, crab meat, bread crumbs, onions, celery, bell pepper, parmesean cheese and egg. Next stuff some bell peppers with the dressing mix and bake. You won't be disappointed.

That was what I thought about. Make it as a casserole, but takin it a step furthurstuffing it in bell peppers and/or grilled Portabellos sounds mighty tasty. I'll probably have enough bell peppers off my plants in the near future to do this with. I'll probably add some crawfish tails too!

Seafood & Egg Plant Stuffing

1 lg eggplant diced
1 med onion diced
1 med bell pepper diced
1 stalk celery diced
2 cloves garlic minced
1# diced shrimp
1# lump crab meat
2c italian bread crumbs
1c parmesan cheese
3 eggs
1/2# butter
10 to 12 green peppers

Cook veg in butter over medium heat till egg plant is tender and onions are clear. Will look like a paste when done. Add shrimp for 5 minutes. Stir in cheese. Turn off heat. Add bread crumbs a little at a time till it comes together and starts to look a dry crab cake. Add egg and mix. Add crab. Season with toney's and Louisiana Hot Sauce to taste. Cut top off peppers
remove seeds. Stuff peppers. Dust tops with parmeasan cheese then bread crumbs. Bake at 350 deg. for 30 to 45 minutes.

I like the big purple Egg Plant. Peel, slice in circles and fry. Sprinkle Sugar on them and eat.
Other way, and bestest way I like them, fry just like above and cover with Shrimp and cream sauce.

I don't care for the long green ones.
