I sampled a couple cookoffs.

The best way I find if that everyone makes a certain size minimum pot of whatevers being cooked gumbo, sauce picaunte, jambalaya..... You get as many "sampling tickets" as there are competitors entries plus a voters choice ticket. If you have 12 people cooking you get 12 tickets of one color plus a voters choice which is another color. With each sampling ticket you get a sample, after you've sampled them all you put your vote in for your favorite in a seperate bucket. Whomever has the most votes wins the "peoples choice award".

I also been to a jamabalaya cookoff where everyone had to use the same ingredients (chicken, sausage) and they could make a jambalaya with whatever they wanted. Those are cool as well. Maybe do a chicken and sausage gumbo for the tender palates and a whatever gumbo for the more adventurous. Just my ¢.02
