Default Crawfish Etouffee annnnd..........




I had intended to cook this on Sunday but I forgot about going to a God's Special Children's mass. No problem something like this is always welcome during the week.

I had some crawfish leftover from a crawfish boil in the freezer and I knew exactly what I was going to make with them. 's more to this meal than just the etouffee but I'll have to see if I can get the rest done later today.
For now though here's what's happening......

Crawfish seasoned!



Ain't they pretty?



Added them to the onions, bell peppers, celery and garlic.



Just simmering now!

I'm not afraid of work but opening a restaurant is a LOT of work! Gotta give to those that do.

I get that all the time. I've been asked to cater for some people but I enjoy cooking for me, my family and friends.

Okay, it was an awesome meal! Tha "annnd...." was deep fried eggplant. They were peeled, sliced in half and cored to make Eggplant Pirogues.

The crawfish was served over rice inside of the fried eggplant halves.



Everyone loved it!
