Not as fancy as sig nates post on here but I had my first attempt at crawfish bisque. I cook lots of different things for many people but this was my first attempt on bisque with some crawfish heads I had in the freezer. Well- my toughest critics told me it was out of this world. Guess I did something wright! By the way- it's a hell of a lot of work to make this!!!! The gravy is not bad but I stuffed 87 crawfish heads.

My Mom and her sister get together a couple times a year and stuff close to a 1,000 heads. That is one thing I need to learn how to cook.

@Snorkler, Learn in NOW!
Looks like "Ooops" did a pretty darn good job there.
My Cajun Grandmother from Sorrento made the best.
She taught me how to cook a lot of cajun dishes but I never helped her make the bisque. Now she's gone and it too late.

People are so busy working theses days no one has the time to make crawfish bisque. Grandma was home all day, so if it took all day to make it....Oh well
